Greek Salad
Tomatoes, cucumber, peppers, onion, capers, rock samphire, olives, xinomizithra (traditional sour Cretan cheese) and fermented tomato dressing with Cretan herbs.
Warm potato salad
Baby potatoes, roasted vegetables, rocket, anthotiro (traditional hard Cretan cheese), cured egg yolk, toasted hazelnuts, Cretan herbs and black garlic mayonnaise.
Tabbouleh with lamb pastrami
Bulgur, seasonal vegetables, pickles and Cretan herbs
“Staras”
Mixed salad leaves, spinach, rocket, pasteli (sesame bar with honey), pickled green apple, raisins, Cretan graviera flakes, rusks and dried fig dressing.

Barley rusk, chopped tomatoes, herbs and myzithra cheese.

Greek yoghurt, cucumber, garlic, olive oil, vinegar.
“Malaka” cheese saganaki
With tomato jam.
Crispy graviera sticks
Wrapped in phyllo dough, salty caramel, pistachio.
Fried potatoes
With coarse salt and oregano.
Grilled beef liver
Carob honey dressing, coarse salt and gremolata.

From organic rethymnian shorthorn cow.

Locally bred limousine beef.

Cooked sous vide for 18 hours, lamb juices, crashed potatoes

Cooked sous vide, graviera and xinohontro cream, potato straw.
Slowly braised beef ribs
Rigatoni with cheese, truffle oil and smoke bechamel sauce.
Grilled beef patties
Fried potatoes, pita bread and paprika dip.

Minced beef and lamb meat, spicy tomato sauce, pita bread and yoghurt.

Crashed potatoes, crispy onion, homemade BBQ sauce.

Apaki, peppers, grated cheese.
